Matter has mass and volume; we identify substances by physical and chemical properties.

All the stuff around you is matter — it has mass and takes up space. We tell substances apart by properties: physical ones (colour, density, melting point) you can observe without changing the substance, and chemical ones (does it burn or rust) that show how it reacts.
